Potatoes with Peanut Sauce image

PAPAS CON SALSA DE MANI (CACAHUATE) This traditional Ecuadorian dish is a nice side with grilled meats.

1/2 c roasted peanuts, peeled
1/2 c skim milk
1 tsp canola oil
1/4 c onion, chopped (white or yellow)
1 garlic clove, minced
1 Tbsp red bell pepper, finely chopped
1/2 c chicken broth, defatted
1/4 tsp salt
1/4 tsp ground white pepper
1/8 tsp annatto powder
1 lb red potatoes, peeled, sliced or cubed, cooked
lettuce leaves
1 tsp fresh cilantro, chopped
5 tsp peanuts, chopped, for garnish

Steps:

  • 1. In a blender or food processor, blend peanuts and milk until smooth.
  • 2. Heat oil in a non-stick skillet over medium-high heat. Saute onion, garlic, and pepper for 1-2 minutes. Stir in chicken broth, peanut sauce, salt, and pepper.
  • 3. Cook over medium-low heat until sauce thickens, about 8-10 minutes. Add the potatoes and toss gently.
  • 4. Serve over lettuce leaves. Sprinkle each serving with cilantro and chopped peanuts.
