Potato Sausage Cheese Soup (using leftovers) image

Another looking in the fridge wondering what to do with some leftovers recipe. Change veggies or sausage type to suit your tastes.

Number Of Ingredients 9

1 shallot, minced
1/2 cup(s) shredded carrots
2 cup(s) chicken broth
2 cup(s) cold mashed potatoes
1 cup(s) milk
2 cup(s) cheddar cheese, shredded
6 breakfast sausage links, cooked and sliced into "coins"
1 tablespoon(s) chives, dried
salt and pepper, to taste

Steps:

  • Place shallot and carrots into a large saucepan and add broth. Bring to a boil; turn down to a simmer and cook 5 minutes.
  • Stir in potatoes, milk and cheese. Stir until cheese is melted. Add more milk if too thick.
  • Stir in sausage "coins" and dried chives and simmer until heated through. Season with salt and pepper.
