POTATO, HAM AND SPINACH FRITTATA image

3 T. olive oil
2 sm. russet potatoes, 3/4 #, peeled and thinly sliced
1 sm. onion, thinly sliced
9 lg. eggs
Kosher salt and pepper
1 10 oz. frozen chopped spinach, thawed and drained
4 oz. grated Cheddar
4 oz. thinly sliced deli ham, cut into 2" pieces
1 T. red wine vinegar
1 t. Dijon mustard
6 c. red leaf lettuce

Steps:

  • Heat oven to 400°. Heat 2 T. oil in a large oven-proof skillet over medium heat. Add potatoes and onion and cook, toss ocassionally, until potatoes are tender 12 -15 min. Meanwhile, in a large bowl, whisk eggs and seasoning. Stir in spinach, cheese, and ham. Add egg mixture to skillet, stir once, and transfer skillet to oven. Cook until eggs are set., 12-14 min. Blend 1 T. oil, mustard and vinegar. Dress greens
