Potato Fritters image

These are small fried potato cakes that are melt in your mouth good.

Number Of Ingredients 6

4 medium size potatoes peeled, and coarsly grated and squeezed in a kitchen towel to dry
5 Tbsp flour
1 1/2 tsp salt
1/2 tsp black pepper
2 large eggs, lightly beaten
2 Tbsp vegetable oil

Steps:

  • 1. In a bowl, combine well the potatoes, flour , salt, pepper. Stir in the eggs and the 2 tabelspoons vegetable oil, mixing thoroughly.
  • 2. In a frying pan, heat 1/2 inch of oil. It is hot enough when a small amount of the mixture dropped into the oil will instantly sizzles. Drop heaping teaspoonful of the mixture into the hot oil. DO NOT CROWD .
  • 3. Taste one of the first fritters for seasoning. Stir mixture each time before dropping into the oil. When the bottoms of the fritters are crisply golden, turn and brown the other side. Drain on paper towels and serve immediately.
