POTATO CHEESE SOUP image

Number Of Ingredients 11

4 c. sliced potatoes
2 c. water
2 t. salt
1 T. oil
1 sm. Onion, diced
5 sprigs parsley
3 c. milk
1 c. grated cheese
2 T. butter
¼ t. pepper
Pinch garlic powder

Steps:

  • Cook potatoes in salted water until tender Drain, reserve water Saute onion in oil until soft Place ½ potatoes, all the reserved water, sautéed onion and parsley in a lender Pulse until smooth Return mixture until smooth, slowly add milk Stirring, add cheese, butter, seasonings, remainder of potatoes and some shredded carrot Heat until cheese is melted and soup is hot. DO NOT BOIL
