Potato and Two Cheese Soup image

Delicious and so cheesy

Number Of Ingredients 8

8 c chicken stock
6 medium yucon gold potatoes peeled and shredded
1 medium onion diced
2 tsp cajun seasoning
1 lb velveeta cheese
2 c shredded sharp cheddar cheese
2 Tbsp parsley chopped
salt and pepper to taste

Steps:

  • 1. Place the stock in a large pot over med high heat. Add the potatoes, onions, and cajun seasoning. Bring to a boil and cook for 10 minutes until potatoes are tender.
  • 2. Add the cheeses and cook until cheeses are melted. Stir in the parsley. Taste and adjust for salt and pepper.
