Steps:
- Heat olive oil over medium-high heat in a heavy skillet. Add onions and garlic and saute until they begin to soften, about 4 minutes. Do not allow to brown. Add portabellas. Stir or turn til they begin to soften and glisten, about 4 more minutes. Add champagne or wine. Simmer til liquid is reduced by 1/2, about 4 minutes. Turn heat to low. Stir in low fat sour cream and paprika. Taste for seasoning and add more paprika, and salt if desired. Serve over hot noodles.
