Steps:
- 1. Pre-heat oven to 350. 2. Season pork with paprika, pepper and salt. Coat with flour. 3. Heat oil in heavy roasting pan over medium heat. Add pork and cook until lightly browned on all sides, 4-5 minutes. Add shallots and cook for 1 minute, stirring once or twice. 4. Add sherry and 1/3 cup broth. Roast uncovered, turning once or twice until meat thermometer is 155 (25-30 mintues for medium). Remove pork. 5. Add broth to make 3-4 Tbsp. Add half and half. Cook until slightly thick (1-2 minutes). Slice pork and drizzle wth almonds. Serve cream sauce on side.
