PORK LOIN WITH TZATZIKI SAUCE image

3/4 cup plain low-fat Greek Yogurt
1/4 cup grated peeled English Cuccumber
1 T chopped fresh Dill
2 tsp Red Wine Vinegar
1/4 tsp Salt
1/8 tsp Pepper
2 cloves Garlic minced
1 Lb Pork Tenderloin

Steps:

  • Combine first 7 ingredients. Refriderate while pork is cooking. Pre-heat oven 400 deg F. Sprinkle Salt and Pepper over 1 Lb Pork Loin. Heat a large skillet over medium high heat. Add 1 Tablespoon Olive Oil to pan. Add pork to pan; cook 3 minutes browning on all sides. Place in baking dish (add vegetables to roast with pork). Bake until pork reaches an internal temperature of 145 deg. Let stand for 5 minutes. Cut across the grain into thin slices, serve with sauce.
