Pork Cutlets with Southwestern Sauce image

Number Of Ingredients 12

1 cup uncooked regular long-grain white rice
2 cups water
1 pound pork cutlets
1 tablespoon oil
1 (16-ounce) can whole tomato, undrained, cut up
1 (8-ounce) can tomato sauce
1 (4 1/2-ounce) can chopped green chili
1/2 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon cumin
1/4 cup raisins
1 (1-pound) package frozen mixed vegetables

Steps:

  • 1. Cook rice in water as directed on package.2. Meanwhile, if necessary, cut pork into 4 serving-sized pieces. Heat oil in large skillet over medium-high heat until hot. Add pork cook until lightly browned on both sides.3. Reduce heat to medium. Stir in tomatoes, tomato sauce, chiles, salt, onion powder and cumin cook 5 minutes.4. Add raisins and frozen vegetables. Bring to a boil. Reduce heat to low cover and simmer 15 to 20 minutes or until vegetables and pork are tender, stirring occasionally.
