PORK CHOPS WITH MUSHROOM-MARSALA SAUCE image

4 tablespoons flour divided
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
4 (4 oz) boneless center-cut pork chops
1 tablespoon olive oil
1/4 cup finely chopped shallots
2 cloves garlic finely minced
12 ounces mushrooms sliced (about 4 cups)
1 cup low sodium chicken broth
1/4 cup marsala wine

Steps:

  • * Combine 3 tbsp on plate with tyhme, salt and pepper * dreg pork chops lightly on both sides and set aside. Add remaining tbsp of flour to plate and set aside * Heat oil in large non-stick skillet (medium high). Add pork chops and cook till nicely browned (about 4 minutes /side). Remove from pan. * Add shallots, garli, and mushrooms to pan. Stir frequently. Cook until the give off liquid and begin to soften (about 3 minutes). Sprinkle with reserved flour and cook 1 minute until flour is no longer visible. * Stir in broth and marsala and bring to a boil. Reduce heat and continue cooking and stirring until the sauce thickens (2-3 minutes). Taste and salt if needed. * Retrun chops to pan turning once until they are heated throuygh (about 2 minutes). Serve with sauce spooned over chops.
