POMEGRANATE SHEET CAKE WITH LIME GLAZE (MODIFIED) image

White Cake Mix
Pomegranate juice
Eggs (per cake mix)
Vegetable oil (per cake mix)
1/2 cup plain Greek yogurt
1 1/2 cups powdered sugar
1 tsp vanilla extract
2 tsp lime peel
Pomegranate seeds (garnish)
Mint (garnish)

Steps:

  • Make white cake mix according to box, substituting pomegranate juice for water and adding the yogurt. Sift 1.5 cups powdered sugar into medium bowl; whisk in 1/4 cup pomegranate juice, 1 tsp. vanilla, and 1 teaspoon lime peel. Using fork, poke holes in top of warm cake, spacing 1 inch apart. Pour glaze over cake and spread evenly. Cool completely. Sprinkle pomegranate seeds, mint, and 1 teaspoon lime peel over cake before serving.
