POLLO AL AJILLO (DAISY) image

Number Of Ingredients 8

12 large chicken thighs (about 4 lbs)
Salt
Pepper
1/4 c. canola oil
10 cloves garlic, sliced
2 t. chopped fresh thyme
1/2 c. dry sherry
1/2 c. chicken broth

Steps:

  • Pat dry chicken. Season with salt & pepper. Brown in oil, remove & drain. Remove all but 2 T oil from pan. Turn on low. Add garlic & thyme & cook until garlic starts to turn golden. Pour in sherry, increase heat, let boil 2 minutes. Return chicken to pan, return heat to low. Pour in chicken broth and bring to a simmer. Cover tightly, cook 20 minutes. Flip chicken pieces & cook 20 minutes more.
