Pinto Bean Pie (Imitation Pecan) image

Not sure where i got this recipe from. It really does taste like a pecan pie.My family loves this recipe.

Number Of Ingredients 7

2 c pinto beans, cooked and mashed( i used refried beans)
1 1/2 c sugar
1 tsp vanilla extract
2 eggs, beaten
1 stick butter, room temperature
1/4 c chopped pecans
1 unbaked pie shell

Steps:

  • 1. Melt butter; cream with sugar.
  • 2. Add eggs, vanilla and mashed beans. mix well.
  • 3. Add pecans. Pour into unbaked pie shell. Bake at 350 for about 45 minutes or until firm.
