Steps:
- 1. Rub the lime wedge across the rim of a large (8-oz size) old-fashioned glass. Dip the rim in the sugar.
- 2. Tear mint leaves and place in the bottom of the old-fashioned glass. Add grapefruit zest (if using) and simple syrup, and muddle the mint leaves, to release the mint flavoring. Add ice cubes to the glass.
- 3. Gently pour in rum and pink grapefruit juice over the ice (being careful not to knock any of the sugar off the rim). Top off with a few splashes of club soda. Stir gently to blend the flavors.
- 4. Garnish with a fresh grapefruit segment, and serve immediately.
