Pineapple Zucchini Loaf image

Number Of Ingredients 13

3 Eggs
2 cups Sugar
1 cup Vegetable oil (or coconut)
2 teaspoons Vanilla extract
2 cups Zucchini, unpeeled, coarsely shredded
1 (8-1/4 oz.) can Crushed pineapple, drained well
3 cups All purpose flour
2 teaspoons Baking soda
1 teaspoon Salt
1/2 teaspoon Baking powder
1-1/2 teaspoons Cinnamon
3/4 teaspoon Ground nutmeg
1 cup Walnuts, finely chopped

Steps:

  • Preheat oven to 350F. Lightly grease 2 loaf pans (9×5"); set aside.
  • In a bowl, beat eggs until frothy; beat in sugar, oil & vanilla until thick & foamy. Stir in zucchini & pineapple. In another bowl, mix flour, soda, salt, baking powder, cinnamon & nutmeg; add to zucchini-pineapple mixture & stir until just moistened. Fold in walnuts.
  • Bake for 40-50 minutes; checking at 40. Makes 2 loaves.
