PINEAPPLE SAUSAGE BREAKFAST PUDDING image

1 large loaf of Italian bread (diced)
9 large eggs
1/2 cup sugar
3 1/2 cups milk
1 tsp vanilla
3 1/2 tsp cinnamon
1 tsp nutmeg
2 20 oz. cans crushed pineapple
4 boxes Banquet sausage (10 each) cut into bite-sized pcs., browned per package microwave instructions.

Steps:

  • Butter a 9 x 13 casserole dish. Place diced bread in the bottom of the dish. In a bowl, whisk together sugar, milk, eggs, and vanilla. Pour half of the egg mixture over the bread. Sprinkle the sausage bites evenly over bread mixture. Pour two cans of pineapple over top. Top with remaining egg mixture. Sprinkle with nutmeg. Refrigerate overnight. In the morning remove from the refrigerator for 15 minutes. Place in a pre-heated 350 oven for 1 hour.
