Pina Colada Cake image

This is for those who love coconut, pineapple, and Pina Coladas without the alcohol! It is another shortcut recipe, but it is moist and delicious! I hope you enjoy it as much as we do!

1 lemon cake mix
4 eggs
3/4 c vegetable oil
10 oz 7-up
8 oz crushed pineapple, drained (small can)
1 box vanilla instant pudding mix (4.6 oz.)
1 tsp rum flavored extract (optional)
1/2 c pecans, chopped (optional)
FROSTING
1 box powdered sugar (lb.)
8 oz cream cheese, softened
1/2 stick butter, softened
1 tsp coconut extract
1 c coconut, flaked

Steps:

  • 1. Beat eggs until creamy. Add oil, 7-Up, dry cake mix, pudding mix, and rum flavored extract. Mix well and add drained pineapple; stir in pecans. Bake in a 13x9 in. greased baking dish at 350 degrees for 25 minutes or as directed for a 13x9 in. cake pan. Cool and frost.
  • 2. Frosting: Beat together the cream cheese and butter until it is a creamy blend. Add sugar slowly while beating. Mix in the coconut extract. Frost cake and sprinkle with coconut. Option: If you prefer, add coconut to icing before frosting.
