A healthy version of my new addiction. Only 7 PointsPlus on WW per serving! This will be creamier than regular pimento cheese, but it's a great substitute. You can add diced jalapenos with the pimento peppers at the end for a fun, spicy twist. A note about the spices: you can add more or less, depending on your tastes. I love garlic, so I always add a little more. Even though salt is optional, I always add it!

Steps:
- With an electric mixer, mix the Ricotta and cheddar cheese together. Mix for 2-3 minutes.
- Add in the Greek Yogurt and mix.
- Add in the garlic powder, onion powder, paprika, and dried mustard. Mix well.
- Add in the diced pimentos and mix. Add salt, pepper, and vinegar to taste.
- Refrigerate at least 10-15 minutes before serving.
