Pig Pickin' Cake image

This recipe started with my grandmother, but mom made it a lot too. It made an appearance at a lot of family gatherings. I've only seen two other recipes on here for this, and they are both different than this one, so I'm posting it. This is GOOD! If you want something yummy and refreshing, this is it! The possiblities with this cake are endless, as you can use a variety of fruit and pudding flavors, or flavor combos, in this cake. So have fun! And, enjoy! **Prep time includes time to frost a 3 layer cake. If you want to make this even faster and easier, bake the cake in a large glass casserole dish and then frost that. My mom and grandmother did it this way most of the time.** Note: Photos borrowed from internet.

Number Of Ingredients 9

1 small package instant pudding
1 - cake mix
3/4 cup(s) oil
4 - eggs
1 can(s) mandarin oranges, drained and chopped (or other fruit of your choice)
FOR FROSTING:
1 large container cool whip
1 small package instant pudding
1 can(s) crushed pineapple, (or fruit of your choice, chopped), including juice

Steps:

  • Mix all ingredients together well. Bake in 3 (8 inch) greased and floured cake pans. Bake at 350 degrees for 15-20 min., or until done. (If using large glass dish instead, increase baking time by 20 to 30 min., or until cake is done.)
  • For Frosting: Mix ingredients together well. Frost cake when cooled and refrigerate until completely chilled prior to serving.
