Picnic Green Bean Salad image

How to make Picnic Green Bean Salad

Number Of Ingredients 11

1 pound fresh Italian green beans, flat, stringless
3 teaspoons sugar
2 tablespoons extra virgin olive oil
2 teaspoons cider vinegar
1 tomato, diced
2 clove garlic minced
1 small onion or 2 green onions, diced
1/2 teaspoon fresh terragon
fresh ground black pepper, to taste
salt. to taste
1 teaspoon garlic powder

Steps:

  • Snap ends of beans and cut into 1" pieces. Either steam until just tender -- about 10 minutes -- or boil in lightly salted water until al dente. Drain and rinse with cool water but do not let them get cool. Drain. Or use frozen green beans and completely thaw them.
  • Add the tomato, oil and vinegar, sugar, salts and pepper, garlic and onion, and mix well. Adjust the seasonings to your taste. Chill for one to two hours.
  • Place the salad on a platter or other long dish with a lip. Enjoy.
