Pickled carrot salad image

Number Of Ingredients 9

4 carrots
3 shallots, minced
1 teaspoon cumin seeds
5 tablespoon olive oil
2 teaspoon lemon juice, and zest
1 teaspoon fresh ginger, grated
1 cup fresh mint, minced
1 cup fresh coriander, minced
1 teaspoon sesame seeds

Steps:

  • Peel carrots and cut into fine julienne, or very thin slices. Place in medium bowl with shallots. Heat cumin seeds in pan for 1 minute. Whisk together oil, lemon, ginger and cumin. Pour over carrots, add mint, coriander and sesame, and let marinate 10 minutes to 24 hours.
