PEPPER JACK CORN DIP image

Number Of Ingredients 7

1 cup mayonnaise
1 cup Monterey Jack cheese (with peppers), shredded
1 can Mexican style corn
1/2 cup parmesan cheese, shredded
3 tablespoons pickeled jalapeno peppers, chopped
Additional jalapenos to taste (for top of dip)
1 corn chips (like Fritos)

Steps:

  • Combine all ingredients except for corn chips and additional jalapenos. Spread mixture in shallow baking pan (approx 8x8) or pie dish that has been sprayed with non-stick spray. Top with additional jalapenos to taste. Bake at 350 for about 25 minutes until browning and bubbly. Serve hot with corn chips.
