PENNE WITH TOMATO-MUSHROOM SAUCE image

Number Of Ingredients 13

1 lb penne
3T olive oil
2 med onions
1t kosher salt
1/2t pepper
3 cloves garlic
8 oz mushrooms, sliced
1/3 C dry red wine
4C torn escaraole (optional)
3/4C chopped fresh herbs (such as parsley and oregano)
1 28-oz can crushed tomatoes
1C thinly sliced basil leaves
1/2 C Pecorino Romano or Parmesan

Steps:

  • Heat the oil in a large saucepan over medium heat. Add the onions, 1/2t salt, and 1/4t pepper and cook, covered, until the onions are soft, about 8 minutes. Add the garlic and mushrooms and cook, covered, for 6 minutes. Add the wine and cook, uncovered, for 3 minutes. Stir in the escarole (if using) and chopped herbs, season with the remaining salt and pepper, and cook for 4 minutes. Add the tomatoes and heat through. Stir in the basil. When the pasta is cooked, transfer the pasta to plates, spoon the suace over the top, and sprinkle with the cheese.
