Peanut-Crusted Chicken Skewers with Dipping Sauce image

Serve as an appetizer or light meal. If you don't want a spicy sauce, feel free to use Asian sweet chili sauce with the mayo.

3/4 cup(s) roasted peanuts, salted
1/2 cup(s) panko bread crumbs
1/4 cup(s) fresh cilantro, chopped
salt & pepper to taste
2 8-oz. boneless, skinless chicken breasts, cut crosswise into 24 thin strips
3 tablespoon(s) vegetable oil
1/2 cup(s) mayonnaise
1-2 teaspoon(s) asian chili-garlic sauce

Steps:

  • In a shallow dish, combine the peanuts, bread crumbs, cilantro and 1/2 tsp salt & pepper.
  • Soak wooden skewers in water to prevent burning. Thread each chicken strip onto a skewer and then coat each strip in peanut mixture pressing gently to help the coating adhere.
  • Heat the oil in a large nonstick skillet over medium-high heat. Cook in batches until golden brown - approx. 2-3 minutes per side. Add more oil as needed. Transfer cooked chicken to a plate.
  • In a small bowl, combine the mayonnaise and chili-garlic sauce. Serve as a dipping sauce for the chicken.
