Peanut Butter Cookies image

This is my second favorite all-time cookie! I have been posting recipes for cookies I used to make and gift at Christmas, and PB cookies were on that list, BUT this is yet another cookie recipe that comes from hubby's family that is better than mine! These come out so chewy and wonderful...and I'm a sucker for a good chewy cookie! He used to make these for church potlucks and once people found out they were there, if you didn't get to them fast you didn't get one! LOL He was asked to make them for every bake sale too and they were the first to go. He would always set some aside for the woman in charge of food at the church, who is one of the most amazing cooks I have ever met, and she would hide them from her family. I took about 12 dozen to a women's tea once and had people filling ziplocks and hiding them before they even made it to the serving table. Yes, they are THAT good! If you try them, I promise you will love them...everyone does! LOL Note: If your prefer a crispier cookie, use butter in place of the shortening. *Photo is borrowed from internet.**

Number Of Ingredients 8

1 cup(s) brown sugar
1 cup(s) white sugar
2 - eggs
1 cup(s) creamy peanut butter
1 cup(s) shortening
1 teaspoon(s) baking soda
2 1/2 cup(s) flour
1 teaspoon(s) vanilla

Steps:

  • Cream shortening and sugars. Add eggs and peanut butter and mix well. Mix dry ingredients together in a seperate bowl. Add to creamed mixture and mix well. Roll into 1 inch balls. Place on a cookie sheet and press with a fork to make crosshatch pattern on top and to flatten to about 1/2 an inch thickness. Bake at 375 degrees for 8-10 minutes.
