Pea Casserole image

I got this recipe from my ex mother in law about 8 years ago. I love peas and this casserole is always a hit when I take to a church potluck or to a lunchen. I also always make it every Thanksgiving and Christmas.

Number Of Ingredients 7

2 can(s) lesuer baby peas
2 can(s) cream of celery soup
1 can(s) medium size sliced water chestnuts - diced
1 jar(s) meduim size pimentos - diced
1 package(s) mild finely shredded cheddar cheese
1 stick(s) butter - melted
2 - sleeves ritz crackers crushed small

Steps:

  • Drain the Lesuer peas and pour into a glass baking dish. Mix in the 2 cans cream of celery, diced water chestnuts and pimento. spread throughout pan, spread the shredded cheese over the top of pea mixture. Crush good the 2 sleeves of Ritz crackers and add the 1 stick melted butter coating the crackers well. spread on top of cheese. Bake at 350 for about 20 min or so untill bubbly at edges careful not to let crackers get to brown.
