Number Of Ingredients 18

1 1/4 Cups Whole Wheat Flour
2 Cups All Bran Cereal (or 1 cup cereal + 1 cup oatmeal)
1 1/4 Cups Almond Flour (or ground whole almonds)
1 Cup 100% Whole Wheat Bran (I use half oat bran)
2 1/2 tsp Baking Soda
1/2 tsp Allspice
1 tsp Cinnamon
1/4 tsp Nutmeg
1/2 tsp Salt
1/2 Cup Dates (about 10/12 - substituted for 1/2 cup sugar)
3 Eggs
2 Cups Almond Milk
1/2 Cup Olive Oil
1 tsp Vanilla
1 Cup Boiling Water
1 Apple - Shredded, then chopped
1 Cup Chopped Walnuts
Blueberries (five or six per muffin)

Steps:

  • Add dry ingredients to large bowl: 1 1/4 Cups Whole Wheat Flour 2 Cups All Bran Cereal (or 1 cup cereal + 1 cup oatmeal) 1 1/4 Cup Almond Flour (or ground whole almonds) 1 Cup 100% Whole Wheat Bran (I use half oat bran) 2 1/2 tsp Baking Soda 1/2 tsp Allspice 1 tsp Cinnamon 1/4 tsp Nutmeg 1/2 tsp Salt Blend in Blender until Dates are semi-liquified: 1/2 Cup Dates (about 10/12 - substituted for 1/2 cup sugar) 3 Eggs 2 Cups Almond Milk 1/2 Cup Olive Oil 1 tsp Vanilla Mix liquids with dry ingredients (just till moistened), then add: 1 Cup Boiling Water Stir in: 1 Apple - Shredded then chopped 1 Cup Chopped Walnuts Blueberries (five or six per muffin) Fill two regular sized muffin tins. Makes 24 muffins Bake at 400 degrees for 13 to 15 minutes.
