PASTA W/SHRIMP, TOMATOES & EGGPLANT image

Number Of Ingredients 11

8 oz bow tie pasta
1 lb cleaned shrimp
1/2 cup chopped tomatoes
1/2 cup eggplant diced into 1" cubes
1/2 cup onion
1/4 cup white wine
2 Tbsp Cilantro
1/2 tsp curry powder
2 tsp garlic
4 Tbsp Olive Oil
1 tsp ginger

Steps:

  • Heat the olive oil in a large sauce pan. Saute the shrimp until done. Remove from the pan & add tomatoes, eggplant & onions, lower the heat & simmer for approx. 5 minutes. Add the remaining ingredients and the shrimp. Simmer for 1 minute. Remove from heat & keep warm. Meanwhile cook pasta and toss with shrimp mixture.
