PASTA, GREENS AND BEANS image

Number Of Ingredients 14

2 tsp canola oil
3 ounces diced pancetta
1 onion diced fine
10 ounces swiss chard, stems diced fine and leaves roughly chopped
2 tsp minced rosemary
1 garlic clove minced
1/4 tsp red pepper flakes
1 can cannellini beans
1 can pinto beans
1 parm rind
1/2 cup grated parm
8 ounces fusili
salt
1 tbsp red wine vinegar

Steps:

  • Heat oil in dutch oven over med high til smoking and cook pancetta til begins to brown. Add onion and stems of chard and food 3 minutes. Add 1 tsp rosemary, garlic, and pepper flakes and cook 1 minutes. Stir in beans (UNRINSED), 1.5 cups water, and rind. Bring to boil and simmer for 10 minutes. Cook pasta til just under al dente. Stir in pasta to beans and lay chard on top and cover off heat til wilted. Add 1 tsp rosemary, parm, vinegar.
