PASTA AL CAVOLFIORE image

Yield 6 servings

Number Of Ingredients 10

1/4 cup olive oil
2 Tablespoons butter (I don't use)
1 medium cauliflower broken into one-inch flowerets
3 medium cloves crushed garlic (about 1 teaspoon)
1 bay leaf
1 teaspoons basil
2 cups tomato puree
salt and lots of black pepper
2 cups mixed grated parmesan and cheddar cheeses
1 lb. uncooked spaghetti (even better with fusilli or another curly noodle)

Steps:

  • Heat 2 Tablespoons oil in deep pan. Add crushed garlic, bay lef and basil. Saute about 1 minute, then add cauliflower and sprinkle with 1 teaspoon salt. Saute until cauliflower is tender. Add water and cover to steam it along. Add tomato puree and lower to simmer. Simmer 15 or so minutes. Cook pasta in plenty of water (8 to 10 minutes) Drain and toss with olive oil. Spread onto platter or into bowls, add cauliflower and sauce. Top with grated cheese mixture. Serve immediately!
