150g/5½oz plain flour
75g/2¾oz parmesan (or similar vegetarian hard cheese)
100g/3½oz unsalted butter
1 free-range egg yolk

Steps:

  • Blitz to a clump in mixer. Divide into two. Roll into sausage and wrap in clingfilm. Pop in fridge to chill 45 mins. Slice into discs pound coin thick. 20 mins in oven 180 degrees.
