Parmesan Knots image

I love hot, homemade bread of all kinds. Here is something that I created using my Classic Dinner Roll recipe and kicking it up a little bit. These are great served with spaghetti or your favorite soup or stew.

DOUGH:
2 to 2 1/4 c all-purpose flour
2 Tbsp sugar
1 envelope rapid-rise yeast
1/2 tsp salt
1/2 c milk
1/4 c water
TOPPING:
1/4 c canola oil
3 Tbsp grated parmesan cheese
1 tsp garlic powder
1/2 tsp dried oregano
1 tsp dried parsley flakes

Steps:

  • 1. Combine 3/4 cup flour, sugar, undissolved yeast and salt in a large bowl.
  • 2. Heat milk, water and butter until very warm (120º to 130ºF).
  • 3. Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally.
  • 4. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough.
  • 5. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
  • 6. Divide dough into 14 equal pieces. Roll each piece into a 10-in. rope and tie into a knot; tuck ends under. Place 2 in. apart on a greased baking sheet.
  • 7. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
  • 8. Bake at 400° for 10 to 12 minutes or until golden brown.
  • 9. In a large bowl, combine the remaining ingredients; brush the warm knots with the mixture.
  • 10. Serve warm with your favorite spaghetti, soup or stew.
