Parmesan and Asiago Cauliflower Potato Mash image

A delicious side dish.

Number Of Ingredients 11

1 lb red skinned potatoes, peeled and halved
1 lb cauliflower florets
2 Tbsp roasted garlic, pureed
1/2 c white wine
1/2 c chicken broth
1/4 c heavy cream
2 tsp kosher salt
2 Tbsp parmesan cheese, grated
3 Tbsp softened, unsalted butter
pepper to taste
3/4 c asiago cheese, grated

Steps:

  • 1. In a 6 quart pot, combine potatoes, cauliflower, roasted garlic, wine, chicken broth, heavy cream and salt and simmer 15 to 20 minutes or until potatoes are cooked.
  • 2. Remove from heat. Mash potato and cauliflower until smooth. While still hot, mix in parmesan cheese, asiago cheese and butter. Season to taste with pepper.
