Pancake cubes image

When my daughters were young, I would make pancakes often and found that I always had leftovers. Rather then just freeze them, I would make this recipe to use up the leftovers and I found that I enjoyed them even better made this way. I was then making sure that I always had some leftovers to use this recipe.

8 large leftover pancakes
1 Tbsp granulated sugar
1 tsp cinnamon
2 Tbsp butter/margarine

Steps:

  • 1. Cut the cold leftover pancakes into small squares. Add the sugar and cinnamon to the pancakes and mix well. Heat a griddle and add butter. Once butter has melted and the griddle is hot, add the pancake mixture. Fry and move around the little squares of pancakes and brown lightly until all the butter is soaked up and the pancake squares have begun to brown. I used to serve this as is but you can certainly add maple syrup or honey to the dish when serving.
