Steps:
- 1. Pour olive oil into 12 inch saute pan, turn heat to high and when oil hot slip in meat. Turn the ribs 2-3 times to brown well. It pan crowded, do a batch at a time, then return all to pan. Pour in wine and turn ribs 1-2 more times while wine bubbles away. 2. Add the sliced onions, s & chili pepper, cover pan and turn heat down to low. Cook for 2-3 hours, turning the ribs occasionally, until the meaty part of the ribs feels very tender and the onions have cooked down to a cream consistency.
