Steps:
- combine seasonings sprinkle chicken with 1tbs plus 1 tsp seasoning mix and rub it in well heat olive oli over high heat, add chicken large pieces first, skin down, cook until skin is brown, about 4 min turn over and cook until brown remove from pot and set aside ad onions, celery, bell pepper and 1 bts plus 2 tsp seasoning. mix wel and scrape the bottom of the pan if necessary, deglaze pot with a little stock add andouille cook for 4 min sprinlke flour evenly over top of mixture and stir until no white is visible stirin the stock and scrape the bottom of the pot again to loosen brown bits. return chicke na dnjuices to the pot, when it begins to boil, reduce heat to medium, cover and simmer until chx is fully cooked 15-20 min serve hot w rice
