Overnight Marinated Tomatoes image

I love this recipe because it's super simple and perfect for a fancy dinner party. The best part is you can make them ahead! I always serve them on individual chilled plates with a basil leaf as garnish.

⅔ cup canola oil
¼ cup white vinegar
2 tablespoons dry white wine
1 (0.65 ounce) package garlic cheese dressing mix
6 medium tomatoes, sliced 1/4-inch thick
1 cup grated Parmesan cheese
½ cup green onions, thinly sliced on the diagonal

Steps:

  • Whisk oil, vinegar, white wine, and dressing mix together in a small bowl.
  • Arrange 1/2 of the tomato slices over the bottom of a 9x13-inch pan. Sprinkle 1/2 of the Parmesan cheese and green onions on top. Pour 1/2 of the oil and vinegar mixture on top. Repeat with remaining tomatoes, cheese, green onions, and oil and vinegar mixture.
  • Cover with plastic wrap and refrigerate, 8 hours to overnight.
