Overnight Coffee Cake image

This is a really good coffee cake recipe. Originally I saw the recipe on Mr. Food. I have changed it up a bit to suit my taste. You've got to chill this baby overnight, but it's definitely worth it. Serve Overnight Coffee Cake at your next breakfast, or brunch.

COFFEE CAKE
2 cup(s) all-purpose flour
1 teaspoon(s) baking powder
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
3/4 cup(s) granulated sugar or splenda (granulated)
1/2 cup(s) packed brown sugar
1 1/2 teaspoon(s) ground cinnamon
3/4 cup(s) (1 1/2 sticks) butter, melted
1 cup(s) 1%, 2%, or fat free milk
2 large eggs or 1/2 c, liquid egg substitute
1/2 cup(s) chopped pecans or walnuts
1/2 cup(s) coconut, flaked
TOPPING
1 teaspoon(s) ground cinnamon
1/2 cup(s) brown sugar, lightly packed
1/2 cup(s) coconut, flaked
1/2 cup(s) chopped pecans or walnuts

Steps:

  • Coat a 9 x 13-inch baking dish with 'Baker's Joy' cooking spray.
  • In a large bowl, combine flour, baking powder, baking soda, salt, sugar, 1/2 cup brown sugar, 1 1/2 teaspoon cinnamon, butter, eggs or liquid eggs, milk, coconut, and pecans or walnuts.
  • Beat all until well combined; pour into prepared baking dish then cover and chill at least 8 hours, or overnight.
  • NEXT DAY WHEN READY: Preheat oven to 350 degrees F.
  • In a small bowl, combine topping consisting of: 1 tsp. ground cinnamon 1/2 cup EACH of the following ingredients... coconut, brown sugar and pecans or walnuts.
  • Sprinkle over chilled batter and bake 30 to 35 minutes, or until a toothpick inserted in center comes out clean. Cut, serve warm & enjoy! GREAT WITH YOUR FAVORITE CUP OF COFFEE OR HOT CHOCOLATE!
