This is NOT my original recipe! I found it on Facebook at "Judy's Recipes and Other Stuff". It looked so good I tried to pinch it, but Facebook doesn't have the proper format. So.... I pinched it here. The original title of the recipe was too long for "Just a Pinch", but is "Greek Style Oven Roasted Lemon Butter Parmesan...

Steps:
- 1. Preheat oven to 375
- 2. Butter baking dish (large enough to hold all the potatoes)
- 3. Peel potatoes and cut into large bite sized pieces.
- 4. Place potatoes into buttered baking dish.
- 5. In a bowl, combine the broth, lemon juice, melted butter, oregano, salt, pepper, and garlic.
- 6. Pour mixture over the potatoes in the dish. Stir to coat.
- 7. Cover tightly (foil will do) and bake about 40 minutes.
- 8. Remove cover, turn potatoes, sprinkle with parmesan cheese.
- 9. Bake, uncovered, for about 30 minutes (to desired tenderness). You may wish to sprinkle with more parmesan at this point.
- 10. Sprinkle with chopped fresh parsley and serve.
