Orzo Pilaf image

To change our menu options today, instead of potatoes, I opted to make a Pilaf using Orzo. It is a pasta shaped like rice & looks like rice, but only cooks for 8 or 9 minutes, depending on how it is being served. Usuallly it is cooked with celery, onions, carrots, & mushrooms, & often times peas are added, I have even added...

Number Of Ingredients 8

1 lb box orzo
12 oz frozen peas, cooked according to package directions
1 tsp salt added to water
1/2 -1 tsp black pepper
1 can(s) cream of mushroom soup (undiluted) optional or pan drippings from baked chicken
1 can(s) 4 oz. sliced mushrooms(drained) optional
2-3 Tbsp sauteed chopped green onions
2-3 Tbsp butter or margarine if not using soup or pan drippings

Steps:

  • 1. Bring a large pot of water to boil, about 6-8 quarts, add 1 teaspoon of salt.
  • 2. When water comes to a rolling boil add orzo, and cook till al dente, between 7 to 9 minutes, or to your desired doneness.
  • 3. Remove from heat, rinse and drain , and return back to pot,add black pepper, and additional salt if desired, add cooked peas, 2-3 tablespoons of butter or can use pan drippings from baked chicken, or add 1 can of cream of chicken broth and drained sliced mushrooms, sauteed green onions, if using, stir to blend together and serve while hot.
