These cookies are among my favorites, and they are hard to come by unless you bake them yourself, the reason being that everyone wants to add raisins to them. To me, that changes the whole "oatmeal cookie concept." Could be because I don't care for raisins! I'll take my oatmeal cookies plain and simple, thank you! Photo by:...

3/4 c brown sugar, firmly packed
1/2 c sugar
3/4 c shortening
1 egg
1/4 c water
1 tsp vanilla
3 c quaker oats (quick or old fashioned, uncooked)
1 c all purpose flour
1/2 tsp salt
1/2 tsp baking soda

Steps:

  • 1. In a large bowl, beat the brown sugar, shortening, and sugar on medium speed of electric mixer until creamy. Add egg, water and vanilla; beat well.
  • 2. Combine oats, flour, salt and baking soda in a separate large bowl. Add to the sugar mixture. Mix well.
  • 3. Drop dough by rounded teaspoonfuls onto ungreased cookie sheets.
  • 4. Bake in a preheated 350º oven for 9 to 11 minutes or until edges are golden brown. Remove to wire rack. Cool completely. Store tightly covered.
  • 5. To keep cookies fresh, put an apple slice or two in container. Be sure to change the apple slices daily to prevent mold. Or a slice of bread works just as well if you don't have apples.
