Oriental Cucumbers image

I found this recipe in an old recipe box that I had tucked away. It had been clipped from a newspaper many years ago. Make it ahead of time. The longer it sets, the better it becomes. It can be easily doubled.

Number Of Ingredients 5

2 medium cucumbers, peeled and thin sliced
1/2 c rice vinegar
4 Tbsp sugar (more or less to taste)
1 tsp salt
ginger root, 4-5 thin slices

Steps:

  • 1. Place sliced cucumbers in a medium bowl. (If you have a larger cucumber, you may want to slice it in half lengthwise and remove the seeds, then slice thin)
  • 2. Mix together rice vinegar, sugar, salt and ginger root. Pour over sliced cucumbers.
  • 3. Note: Depending on the size of the cucumbers, you may have to increase the amount of dressing.
  • 4. Refrigerate at least 1 hour - longer is better - stir occasionally.
