Orange Beef and Beans image

Marinade the beef strips before cooking to make tender. Marinade in vinegar and lime juice for 4 hours before cooking. Drain and discard marinade......just a thought.

Number Of Ingredients 11

1 tsp cornstarch
1 tsp ground ginger
1/8 tsp pepper
1/4 c reduced-sodium soy sauce
3 Tbsp orange juice
2 Tbsp sugar
1 Tbsp grated orange peel
3/4 lb beef sirloin steak, cut into thin strips
1 Tbsp canola oil
3 c fresh green beans
2 Tbsp water

Steps:

  • 1. In a small bowl, combine the cornstarch, ginger and pepper. Stir in the soy sauce and orange juice until smooth; set aside.
  • 2. In a large resealable plastic bag, combine sugar and orange peel; add beef. Seal bag; toss to coat.
  • 3. In a large nonstick skillet, stir fry beef in oil for 5 minutes or until browned.
  • 4. In a microwave safe dish, cover and cook beans in water for 3-5 minutes on high; drain. Add beans to skillet; cook, stirring constantly, until tender. Stir the orange juice mixture; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened.
