One-Pan Southwestern Chicken Quinoa image

Number Of Ingredients 16

2 tablespoon Olive Oil
2 Chicken Breasts
2 cloves Garlic
1 Jalapeño
1 cup Quinoa
1 cup Vegetable Broth
1 can Black Beans (15 oz)
1 can Fire-roasted Diced Tomatoes (15 oz)
1 cup Corn
1 teaspoon Chili Powder
1/2 teaspoons Cumin
1 dash Salt (to taste)
1 dash Pepper (to taste)
1 Avocado
1 Lime
2 tablespoons Chopped Fresh Cilantro

Steps:

  • Heat olive oil in a large skillet over medium high heat.
  • Dice chicken breasts and cook thoroughly.
  • Add salt and pepper to taste.
  • Add crushed garlic and a diced jalapeño pepper (leave the jalapeño seeds in for extra spice).
  • Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder and cumin
  • Season with salt and pepper to taste.
  • Cover and simmer until quinoa is cooked through, roughly 30 minutes.
  • Stir in avocado, cilantro, and lime juice.
  • Garnish with extra cilantro and enjoy!
