One Pan Sausage and Veggies image

2 cups Red potato, small pieces
3/4 pound Green beans
1.5 cups Broccoli
2 heads Red bell Peppers, large
9 ounces Turkey/Chicken Sausage
6 tablespoon Olive oil
1/4 teaspoon Red pepper flakes
1 teaspoon Paprika
1/2 teaspoon Garlic powder
1 tablespoon Dried Oregano
1 tablespoon Dried Parsley
1/4 - 1/2 teaspoon Salt
1/4 teaspoon Pepper
2 cups Carrots
1 stick Zucchini, small-medium

Steps:

  • Preheat the oven to 400 degress. Line a large sheet pan with foil or parchment paper
  • Prep the veggies: chop the red potatoes (pretty small pieces here so they will be tender in time, 10 pieces per potato), trim the green beans and halve, peel and very thinly slice the carrots, chop the broccoli, chop the peppers into thick squares, cut thick coins of zucchini and coin the sausage in thick slices
  • Place all the veggies and sausage in a large bowl. Pour the olive oil and all the spices on top. Toss to evenly coat all the veggies and meat. Pour in sheet pan lined with foil/parchment paper
  • Bake 15 minutes, remove from the oven and flip/stir all the veggies around. Return to the oven for 10-20 minutes or until veggies are crisp tender.
  • Remove and top, if desired , with freshly grated Parmesan cheese and fresh parsley. Serve on top of rice or quinoa if desired
