ONE-PAN POTATOES & CHICKEN SANTA FE image

Number Of Ingredients 5

4 medium potatoes, cut into 3/4" cubes
1# boned and skinned chicken breast cut into 3/4" cubes
2 tbs evoo
1 c tomato salsa
1 small can whole kernel corn, drained

Steps:

  • Microwave potatoes 8-10 minutes until tender. In large skillet, toss and brown chicken in evoo over high heat for 5 minutes. Add potatoes, saute and toss until potatoes are lightly browned. Add salsa and corn. Toss until heated through.
