Old-Fashioned Potato Pancakes image

Number Of Ingredients 7

4 cups peeled, diced, raw baking potatoes, divided
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 tablespoons Butter Flavor Crisco shortening

Steps:

  • Using blender or food processor, liquefy 3 1/2 cups of potatoes. Blend in the dry ingredients and eggs. Add the remaining 1/2 cup potatoes, blending or processing until chunks are quite small. Cook in Crisco on 375° griddle until crispy outside, tender inside, turning once. Serves 6 big appetites.
