Old Bay Halibut image

You don't have to hail from the South to enjoy this old school offering. Try it with friends - it doubles easily and is just as quick.

Number Of Ingredients 15

1 Tbsp. olive oil
[1]⁄(2) cup slivered onion
1 Tbsp. minced garlic
[1]⁄(2) cup fresh or frozen corn kernels
[1]⁄(4) cup fresh green beans
[1]⁄(4) cup fresh or frozen butter or lima beans
1 cup seeded, chopped tomato
[1]⁄(4) cup dry white wine or low-sodium chicken broth
2 Tbsp. heavy cream
1 tsp. brown sugar
[1]⁄(2) tsp. hot sauce (such as Tabasco)
Salt, black pepper, and red pepper flakes to taste
2 halibut fillets, or other firm white fish (6 oz. each)
Old Bay seasoning
1 Tbsp. olive oil

Steps:

  • For the maque choux, heat 1 Tbsp. oil in a large skillet over medium-high. Add onion and garlic; sauté until softened, 2 minutes. Add corn, green beans, and butter beans; cook until green beans are bright, 2 minutes.
  • Stir in tomato, wine, cream, sugar, and hot sauce. Bring mixture to a boil; reduce heat to medium and simmer until cream is thickened, 3-4 minutes. Season maque choux with salt, black pepper, and pepper flakes.
  • For the fish, season halibut with salt, black pepper, and Old Bay. Heat 1 Tbsp. oil in another skillet over medium-high. Add fish and sauté, about 4 minutes per side. Serve fish with maque choux.
