Okra Jalepeno Corn Bread image

Easy corn bread and very tasty! This is similar to mexican cornbread except for the added okra. Easy to substitute other ingredients that you like instead of ones I have used but my family loves pepper hot corn bread with these ingredients.

Number Of Ingredients 10

1 package(s) cornbread mix, your favorite brand such as jiffy
1 medium egg, beaten
3 tablespoon(s) oil
1 can(s) cream style corn
1/2 cup(s) milk (if mixture is too dry add a little more as needed but don't overdo)
1 cup(s) okra, sliced very thin
1/4 cup(s) onion, minced
1/4 cup(s) jalepeno peppers, seeds removed, chopped
1 cup(s) cheese, grated
1/4 teaspoon(s) cajun seasoning (optional)

Steps:

  • Prepare vegetables first and grate cheese. Preheat overn to 350. Grease skillet and place in oven while oven is preheating. Mix cornbread mix, egg, oil, cream corn and milk. Stir in okra, onion, peppers and cheese. Pour into heated skillet and bake about 45 minutes. Check at 30 to 40 minutes since oven temps vary.
  • Note: Don't like okra, onions or peppers, substitute grated carrots, chopped bell pepper, broccoli, anything you like.
